Proper Sterilization - A Key Step To Fresh And Delicious

bounty of fresh fruit.

In some cases over-zealous food shopping or

an over-abundance of fruit in the garden may leave one with an excess of fresh produce. To be able to avoid

waste, why not take the full advantage of the season's harvest and preserve nature's goodness in the form

of delicious jams? Economical benefits, along with the gratification of creating homemade jams with no

additives make for a low cost, healthier option. Canning might be enjoyed by people of every age

group!

Most commonly used are typically 4oz jelly jars or 8 oz jelly jars during the canning process, which can

usually be found online, or at your local supermarket/superstore. While picking a jar to use for preserves, make sure to select jars free from chips or cracks, as

the high temperatures the glass will be subjected to can cause breakage.

Two piece jar lids are recommended, as they create a vacuum seal while canning, preventing the risk of

food expiration. This vacuum seal helps prevent microorganisms from growing in the jar and contaminating the

food. Paraffin or wax sealing is no longer deemed satisfactory in the preservation process, seeing that

holes or leaks allow the possibility of airborne molds or contaminants to get in the jar. One piece lids are also used, however, they are recommended for one time

use only.

Abide by safe food handling practices and take special care to guarantee

everything is adequately sanitized, beginning with your hands. Start with settin up

the jars for use. Wash your 4oz jelly jars or 8 oz jelly jars (depends upon how much jam you want on preparing or have

prepared) with warm, soapy water, rinsing well. You have to keep

these jars dry after washing them for the jams to prevent from spoiling too soon.

The following can often be used to properly sterilize your jars:

Boiling-Water Canner Process

Place the open jars upright into a boiling-water canner rack. Fill the

canner and jars with hot water, filling to at least 1 inch above the tops of the jars. Add lids to water, and also bring to a

boil, sterilizing for 10 minutes. Remove jars and lids using sanitized tongs (sterilize by submerging the ends of the tongs in

boiling water for several minutes).

Fill jars by using hot, prepared

jam mixture, leaving a 1/4 space from top. Put lids on jars and

tighten. You should wipe

excess jam off jars as well as put them back into the boiling-water canner, processing them in boiling

water approximately 5 minutes.
