holes or leaks allow the possibility of airborne molds or contaminants to get in the jar. One piece lids are also used, however, they are recommended for one time
use only.
Abide by safe food handling practices and take special care to guarantee
everything is adequately sanitized, beginning with your hands. Start with settin up
the jars for use. Wash your 4oz jelly jars or 8 oz jelly jars (depends upon how much jam you want on preparing or have
prepared) with warm, soapy water, rinsing well. You have to keep
these jars dry after washing them for the jams to prevent from spoiling too soon.

Boiling-Water Canner Process
Place the open jars upright into a boiling-water canner rack. Fill the
canner and jars with hot water, filling to at least 1 inch above the tops of the jars. Add lids to water, and also bring to a
boil, sterilizing for 10 minutes. Remove jars and lids using sanitized tongs (sterilize by submerging the ends of the tongs in
boiling water for several minutes).
Fill jars by using hot, prepared
jam mixture, leaving a 1/4 space from top. Put lids on jars and
tighten. You should wipe
excess jam off jars as well as put them back into the boiling-water canner, processing them in boiling
water approximately 5 minutes.
